Accomplishments are awards that are given in game for completing specific tasks and when you get them, they will pop up on the bottom of your screen in a yellow and black box. Some Accomplishments are generic and can be earned in almost any mode while others are mode-specific. In addition, some accomplishments can be earned multiple times in a match (Thanks I 1oneseven7 I). Here are some common Accomplishments I have received to help get you working in the right direction:

Generic
Killstreaks- Achieve a certain amount of kills with a weapon in a match (not necessarily one life). For example, 10 blaster rifle kills, 5 explosive kills, 5 headshot kills, etc.

Mode-Specific
[Supremacy] Capture three command points in succession (i.e. win by never losing control of one).
[Cargo] Carry 3 cargo back to your base
[Fighter Squadron] Win by 75 points
[Fighter Squadron] Achieve 10 kills including AI
[Drop Zone] Capture 5 pods in a row
[Droid Run] Claim 3 droids


If you would like to check to see how many Accomplishments you've achieved so far, you can do so from the main screen. Scroll to the "Stats" tab and click on the left hand box that shows your rank, score, and challenges. This will open a full stats screen with everything you've done in game so far. Accomplishments can be found here.

As of the writing of this solution there are 37 unique "accomplishments" that you can gain so to answer your first question you should be able to earn 1 accomplishment 100 different times and get this achievement. of course you can earn multiple accomplishments per match and some without trying so this will most likely come while you play the game as most of the accomplishments are for getting kills and playing certain game modes. I also assume they will add a few more as the DLC packs get released.

They are broken down into 4 different categories
You can always view your own progress both in game and with the Battlefront companion app.

Currently all you can see from the in game menu is the total number of accomplishments that you currently have:

There are already a couple of good guides on here for working your way through Battlefront's Accomplishments. They are well worth a read.

What I will add is that if you aren't constantly racking up accomplishments with kills or objective feats, obtain the bacta bomb and start healing your teammates at every opportunity. On game modes where teams will cluster somewhat (such as Extraction), you can throw a bacta bomb into a group of fellow players and score easy points for heals.

In no time you'll earn a heal streak and bingo, one accomplishment done. Just rinse and repeat. It also works well for the 'A cunning warrior' achievement, as the points for the heal will help level up your trait as well.
