This achievement is pretty straightforward. You must get 20 killstreaks while flying interceptors. You can do this in Starfighter Assault or Galactic Assault.

You get killstreak every time you shot down at least two enemy starfighters in one life (kills of both player and AI spacecrafts count, and I guess kills of ground troops do too, assists, on the other hand, do not). Next kill in said life is counted as another killstreak. That means you can get The Interceptor achievement as soon as your 21st kill. But there is no need for you to get all the kills in one sitting.

I was able to get the achievement in just one round of Starfighter Assault as the defender on Ryloth/Lucrehulk map (32 eliminations/23 kills). During the first phase stay between battleship arms near shield generators and shoot down every bomber you see and every fighter that is preoccupied with shield generators and doesn't pay enough attention to the opposition.

I played a few rounds of starfighter assault today and I got killstreaks In the interceptor on AI ships

AI kills do count, however, the killstreaks no longer stack. In other words, killing 2 opponents is one killstreak, killing a third opponent is still that same killstreak. So a killstreak is just a killstreak no matter how many kills you get during it. It could be 2 or it could be 17.

I don't know if DICE have changed it again, but the kill streaks do stack. I unlocked the achievement just the other day and it was after getting the third kill in a particular streak.

Just unlocked in Feb 22. I can confirm that I got a streak of 27 kills, mainly AI as there was one human player on the other team and I only killed them once or twice. So you can do this in one game, against AI and have the killstreaks stack. As soon as I hit kill 21 the achievement popped.

Got it on Starfighter Assault. You either need one kill streak of 21 kills, 20 kill streaks of 2 kills each (so 40 kills if all are two kills per life), or some mix. No kills count towards this unless you get the killing shot on at least two ships in a single life. If it’s an assist (meaning another player got the killing shot) or if the ship you’re shooting at crashes into something and kills itself, that kill doesn’t count. Hope this clears up any confusion.

I'm positive that I shot down at least five AI Y-wings (on Ryloth map they always come in waves of threes, in perfect triangle formations and are marked as objectives for defenders, their names are uniform AI names). And they were counted in my total of 23 kills.
Patch 1.3 "fixed an issue in Starfighter Assault where killstreaks would not calculate correctly". It's entirely possible, it wasn't meant for AI kills to be counted in and that they disabled it. (It was reported that some players were exploiting AI kills on certain maps in Galactic Assault, mainly on Kashyyyk.)
Can someone, please, confirm, that AI kills no longer count?

Killing NPCs to get the streak counts. You can kill players and NPCs in combination, too.

This trophy is specific to the “Interceptor” ship class so make sure to pick that when going for this trophy. Although you can pick ships in Galactic Assault and Strike with battle points, your safest bet is to play Starfighter Assault for this trophy because you’ll be in a ship the whole game.

A kill streak is when you kill multiple enemies in one live. Kill assists don’t count towards this trophy, but fortunately if you get a kill streak of more than two those kills actually will count towards the trophy. In theory you could obtain this trophy in a single kill streak of 20, but realistically it will take you a few. Note that killing AI ships counts for this trophy as well so if you’re having difficulties killing other players, go to the outlines of the map and focus on AI.

To make things a bit easier on yourself you can obtain or craft star cards to e.g. upgrade your damage output, survivability or rate of fire. These can be very helpful depending on playstyle.

You can check your progress towards this trophy in the main menu. Go to the “Career” tab, then choose “Starfighters” and find the “Hunt Down the Enemy” milestone.
