Mirror Mode is unlocked after earning 1st place in all 25 races. Once that is done, select a race and before confirming it, press left on the left stick to Mirror: On. Now all you have to do is complete it. I don’t think it matters if you win, but I won mine so I can’t confirm. Obviously the first race of the Amateur Circuit, Tatooine, would be the easiest and shortest.

You can also use the debug menu to enable it before unlocking it

The second race of Amateur, Mon Gazza, is considerably shorter than Tattooine.
