How to unlock the Can't Touch This achievement in STAR WARS Jedi: Fallen Order - Definitive Guide
In this video guide I will show you how to do 100 precision evaded attacks. Now in order to even be able to get progress for this achievement, you will need to wait until you get Double Jump. Because you will at this point have unlocked more of the skill tree. The Precision Evade skill will be in the Survival tree.
Once you have the skill unlocked you will do as you normally would to dodge an enemy. Wait to time the enemy attack, then you to press the B button to dodge. You will know its done right when the animation goes into slow motion. You can do all 100 of these on the same enemy. So once you get the skill you can go up to one enemy and dodge until you get the achievement.

i realized toward the end that if you just press B without touching the stick to move in any direction, it works more frequently

I got this achievement waaay before I'd dodged 100 attacks. Unlocked the skill on Kashyyyk and met a couple of troopers with sticks on a bridge on the way back to the ship. I didn't even spend 5 minuters on that bridge and cheevo poped, and I didn't nail that many precision dodges to be honest. I just though it was a good place to practice. Just sayin. Either it's glitched the other way, or maybe more dodges than just precision dodges count.

If you're having trouble getting your dodges, try just pressing B without any directional input from the sticks. This made it much easier for me.

This slight detail (of not moving the stick) helped me trigger it almost every time

As others have said, Precision Evade must be unlocked in the Skill Tree prior to earning this.
The move itself is simple. Time it as you would a parry, but tap B instead of LB. Make sure the left stick is neutral (you are not moving) or it won't work.
This is best done on aggressive melee-only enemies, such as the Shock Troopers, Purge Troopers, etc. Not to hard to do in the first playthrough if you know what to do and avoid/kill enemies with any sort of ranged attack.
Note: this does not have to be done on different enemies. You can pick one and Matrix him to completion.
Once you unlock Meditation Training in the post-game, you can easily set up a Battle Grid with the necessary enemies to boost it out in about 90 seconds if you haven't already gotten it.

Precision Evade is a skill on the bottom middle right and cost 2 skill points.
For an easy spot go to zeffo and go past the enemies in the hanger into the stairwell then go right when you get outside. You'll see 2 melee stormtroopers past a ranged trooper. Kill the ranger and commander and Presicion evade the other until you unlock the achievement. He has a very basic attack pattern.
The slow motion only seemed to occur with a standing B press.
This shouldn't take very long. Maybe 10 minutes depending on your timing.
Difficulty may affect timing for evasion (I played on jedi master without much trouble) so if you need to lower the difficulty you can in the settings under gameplay.

For this one the idea is to wait until a hit almost completely connects to press the dodge button. When it goes off correctly there's a small sound effect and the game slows down briefly. Pressing dodge without a direction I find helps, and just doing it to one obvious enemy is useful. You can dodge unblockables this way.
If you haven't unlocked this naturally over the course of the game, the easiest way to get this achievement is in the meditation training mode unlocked after you have beaten the game.
Spawn in a bunch of stormtroopers with electric batons and let them attack you, clicking the dodge button (B on an XBox Controller) immediately before they hit you. You will get a sound effect and a little bit of a slow down effect if you do it right.

You need to unlock the Precision Evade ability from the skill tree, then you have to press just before you get hit, its just like the parry move only you dodge rather than block. You'll know you've done it correctly once Cal slows down as he evades the hit. Do that 100 times and the trophy should unlock
Precision Evade is a skill that you can unlock after unlocking double jump
. Once unlocked, you need to hit the dodge button (Z) right before an enemy would strike you. You will doge away from them while also slowing them temporarily.

The "Precision Evade" skill is one of the last few you'll be able to purchase later in the game. Once you do have it, it takes effect automatically with perfectly-timed evasions (your basic dodge). You'll know it worked if there is a Matrix-like slow effect. This is another achievement you can easily farm against a single baton enemy, just stand still and dodge over and over. Similar to other timing-based achievements, you'll have more or less leniency depending on the difficulty you're playing on.

First you need to purchase the ability in the “Survival” section, it becomes available after receiving a double jump (second visit to Kashyyyk). After this, dodge attacks at the last moment for . Repeat 100 times.

After leveling up the dodge skill, it fell out after 20-30 dodges and time dilation.
Either the evasions made before without slowing down time also counted, or the rolls were also taken into account.
The easiest way to get nights on the brothers is on Datamir. They have a series of 3 slow powerful attacks, you easily manage to dodge all 3 attacks.

evasion must be performed while moving backwards from the enemy

There is no need for the Precise Evasion skill. You just need to press the dodge button at the last moment before the enemy hits you.

It’s better to pump up the slowdown when dodging, then it will be clear whether it counts or not
