I can confirm that you can use the same enemy to stock the parry up. I use 3 stormtroopers and just kept on parrying them and the achievement pooped for me.

As has been previous said this can be done quickly using the Lesser Nydak from Dathomir, but it can be done in the Meditation training room instead of the planet. It took me about 5minutes just allowing it to hit me and parrying the punches with LB.
You block using but if you press just at the same time your enemies strike, then instead of blocking you will parry and make your enemy vulnerable to an attack. This is a game changer move as parraying will help you alot during boss fights and when fighting the Inquisitors. A slow choreographic slow moton move is triggered whenever you perform a parry, do that 100 Times and remeber in my experience there is no such thing as luck.
Parries are accomplished in the same method as reflecting blaster bolts (by pressing ) but instead right before a melee attack would hit Cal. Again, you'll have more or less leniency in the timing of this depending on the difficulty. However, this achievement is much easier as you can farm it off a single baton enemy by blocking over and over without killing him.
