How to unlock the Jedi Knight achievement in Star Wars: The Force Unleashed II - Definitive Guide
The Force Unleashed 2 is a fairly short game. According to "How Long to Beat" it clocks in at around 8-16hrs depending on whether or not you're a completionist.
This achievement is unlocked by beating the game on medium/normal difficulty, obviously. Its story related and cannot be missed unless you play it on easy or simply don't finish the game. This should be your standard difficulty unless you're just breezing through the game on Easy for the story. It'd be recommended that if you're going for the difficulty based achievements you do your first play through on hard and a second on the "Unleashed" difficulty.
Like always, if you're not interested in following along in the story and immersion of the game or just want to get it done to boost your gamerscore... IGN has some wonderful guides.

Nice information in this solution. However, I do not understand, why you recommend the first playthrough to be on Hard. This is stackable and Medium and Hard achievements are unlocked, when you complete the game on Unleashed difficulty. Unleashed is unlocked after the first playthrough regardless of difficulty, so a second playthrough is required. But that first playthrough can be done on Easy. If you recommend Hard, I suggest to add some reason like "Hard is not that difficult and will prepare you for Unleashed" or "You will not gain enough experience on Easy". These are just examples and I think they are not correct. Easy gives enough experience and Hard will be a pain without the health and force upgrades which are acquired during the first playthrough.
Again, the solution is very good except for the recommendation to start with Hard (in my opinion).
