How to unlock the Stay On Target… achievement in Star Wars: The Force Unleashed II - Definitive Guide
You actually ONLY need to use dash to get this achievement. Just hit the LB button as quickly as possible once the falling sequence starts.
1. When you hit debris or stormtroopers while dashing this is not counted as a hit and you still get the achievement. Just got mine this way.
2. Also, if you are constantly dashing you get to Gorog quicker (that's where the achievement unlocks). In fact, when I was dashing I didn't even get to the big wall which has to be force pushed in the middle in order to pass. The whole sequence literally lasted a few seconds.

+1 to everything that has already been posted here, but I want to add one more tip:
The achievement is for REACHING the Gorog without hitting any debris. That means if you have already reached him and attacked him, are falling through debris again and HAVEN'T gotten the achievement, you won't get it and need to start again. This will pop the first time you catch up to him, assuming you avoided all collisions. I did this fight three times before that occurred to me and wasted a lot of time doing so.
The suggestion by Protium regarding the costume change WORKS, so if you even think for 1/10th of a second that you might have hit something, change your costume and start again. It's worth the extra ~15 seconds to not have to go through the whole boss fight again.
One last thing: you can get this achievement and "Use the Force, Luke" at the same time. Start the boss fight and never touch the X button, except during QTEs. If you mess up and accidentally use your sabers, you have to start the whole mess over again (sorry!). Assuming all goes according to plan, Stay on Target will pop when you first catch up to the Gorog during the fall and Use the Force, Luke will pop at the beginning of the cutscene.

I just wanted to add that due to a lot of mis-information here on TA and the net that I have been playing this sequence for some time trying to unlock this one stupid achievement. I looked on YouTube today and after watching the video I posted below was able to nab it first time. This is the actual ONLY way to get this achievement. You do not have to get through the ENTIRE sequence, just reach him once without crashing into debris or anything else and you will get the achievement. If you didn't get it by the end of the falling sequence, you didn't do it right.

i found a very easy way to get the achievement thanks to a loophole and here's how:
1. use force lighting instead of force push (clears out all debris and gets rid of storm troopers the same way as push but you can hold down the Y button for a constant stream of lightning)
2. dash whenever the screen is clear of debris; even if its just for a few seconds (make sure you try to charge as much as possible)
3. if you hit any debris outside of a dash change your costume and retry
LOOPHOLE: if you hit any debris during your dash just keep going. unless you take damage from crashing into debris it's not counted for some reason. not 100% sure if this is true but i hit a few rocks during my dive but i was in a dash and still unlocked the achievement.
if this does/does not work please let me know so i can take this down if i'm incorrect

During the fight with the Gorog you will enter a free fall sequence, at this time you will have to navigate towards the Gorog using dash to catch up.There might also be giant walls that come at you. Just use force push to break a hole to pass through. Once you have caught up to him a cut scence will trigger and the achievement should pop.
