How to unlock the Jedi Hunt achievement in Star Wars: The Force Unleashed - Definitive Guide

Simple, just defeat Jedi master Shaak Ti. This can be done on any difficulty, I primarily used force repulse and lightning. then use dash to avoid the sarlacc arms/tentacles, i don't know what they are called.

All you need to do is complete level 3, Felucia. Very easy, and it is story related.

This story related achievement is rewarded for completing the third level, Felucia, as Starkiller. This level's boss is called "Master Shaak Ti." Click here for strategy.
