Just putting this out there but this achievement was glitchy for me. If in the event that the achievement doesn't unlock (and the achievement should unlock immediately after you catch the last fish you need) wait a few minutes (with the game paused) and if it doesn't unlock just quit out of the game and re-catch it. Might sound dumb but mine did unlock after the second catch meaning if I had let it roll into the next day and it saved I would have to catch every fish again on a new save file. Making people aware this is a potential problem you could run into and this isn't the first time the game's acted up like on me either because the achievements for catching 24 different fish and buying the first upgrade to the house haven't popped even though I'm obviously well past that point in the game (or it's the reason why I unlocked those achievements late in the event that your reading this well after I have moved on from playing this game)

There are two more fish not mention in either of the guides above that are needed for this achievement.
The Void Salmon and the Slimejack are two fish that are obtain in a questline that becomes available after the completion of the Community Center/Joja Warehouse. To initiate the quest head to the railroad after the completion of the Com Center and the wizard will give you the quest.
The first location you need to go to is sewers where you'll talk to Krobus in order to gain access to the Mutant Bug Lair, which is where you'll get the Dark Talisman, but more importantly, you'll be able to catch the Slimejack.
Take the Dark Talisman back to the Railroad and place it in the artifact blocking the cave in the back of the area. This will allow access to the Witch's Swamp where you can complete another quest, but also catch the Void Salmon.
These fish and areas were added in a update the PC version of the game and therefore were not required for the original achievement. However since they were in the Xbox version from the beginning, they are required. You can checked which fish you have caught by going to the collections tab in the menu. Here you will see the Void Salmon and Slimejack are the last two greyed-out fish in list. I can confirm you need these fish as I have caught ever other fish besides these two and the achievement did not unlock.

Really Breedhate68? I got it at fishing level 9 without any food buffs and using trap bobber and got it second try.

Those are easy... The damned Stonefish won't appear for me for whatever reason.

With difficult fish, use an iridium fishing rod, a mini-trap and max out the “Fishing” skill - it will increase the bar

Three fish can be skipped, as with the advent of the Night Market there are additional 3 fish. I didn’t catch the legend, crimsonfish and sea bream, but I got the trophy. Catching fast fish is made easier by a mini-trap and a sea dish.
