You will get your first bamboo fishing pole for free from Willy (it costs 500gold at his beach shop).

How to fish:
Face water with the pole selected, hold

to start casting and then release at desired distance. When you get something to bite press

to start the mini-game.
The goal here is to keep the fish inside the green bar. You control it by tapping or holding

. Same as with farming and mining etc, this is a skill you level up.
Be aware some fish are harder then others to catch.

This achievement counts everything you pull up as fish, even driftwood (which is what made it pop for me).

Hmm, on 104 according to the stats but this hasn't popped even after sleeping for a night.
EDIT: Popped eventually and checked, I had got to 128 on the Xbox Stats page. But also, weirdly, the time played had gone up less than hour whilst I'd played it for about 4 hours so not sure what on earth is going on with the stats there.

Alternatively, buy the training pole for 25 gold which makes it so much easier to catch basic fish.

@AKCAJSARRAB , @PoissonRex36 and everyone else in their position.. when you know you are about to get an achievement (you've checked the wiki and are 100% sure you understand how it is supposed to unlock) you should start a new day then catch your final fish and if the achievement doesn't pop.. reset the day and try again.. had to do that a few times in this game ([ii had to reset the day multiple times until this popped.. i have no idea if it took that many attempts or it just took that long for the first time to pop.. but it was annoying either way)
