To unlock this achievement, you'll have to win a cup with the Baba Kart which will be available when you buy it with 960 green tokens. When you are selecting your Kart, it will be the 15th kart. You can choose any cup, but Parallel Peaks on 150cc will be the easiest to tackle. After racing all 4 tracks and winning the cup, you'll unlock the achievement!
This is a FTP game; if you are not interested in buying any green tokens & gold gems, there is a "free" option, but it does have a cooldown. You can check this by hitting
and move to the right to check the offers.

I bought the car, won a lot of races and cups with it, still no achievement

@panzarel wow this game is still so broken since writing this. It sounds like you've done all the things required. The only thing I can think of (aside from deleting saved data) is to force quit the game, change your xbox profile to "offline", boot up the game, and try a full cup (4 races if its the same as I remember) and win with that cart.
If that doesn't work, I'm afraid you'll have to clear your saved data on the game from "everywhere" (on console and cloud) and try it --- BUT I'd leave that as a last resort.
