Quite self explanatory: to defeat the Scribe you have to use one of the weapons found in the DLC itself, for example: Gaia Claws, Lightning Chain or Wheel of justice.
Just before the arene you have a Vestal to level up one these weapon.
Not sure if you can use grenades, I just defeated it with the Gaia Claws and unlocked the achievement.

The Scribe is the final boss of this DLC; it has a long sword, rolls around on two wheels, and regularly uses ink/oil attacks to obscure your vision. The boss fight is not too difficult, especially if you complete this DLC at the end of the main non-DLC storyline.
To earn this trophy, you must complete this boss fight entirely using a weapon that you found in the DLC (hospital) area. You cannot reduce its health at all with other weapons. The video below shows how to defeat the boss using the lightning chain weapon, which works for this trophy.
