How to unlock the Untouchable achievement in Steelrising - Definitive Guide
You will need a weapon that has counterattack as it's special move. When in battle you will press the parry (special move) button (L2). Hit it just before the enemy lands their attack. The timing in this game is reliable so it won't be hard to time. No need to farm in a specific area since this should come naturally over the course of the game.

It helps a lot to have the Efficient Countering Module, which exists in at least grade 1 and 3. Grade 3 makes it really easy to counter.

Counterattack is a special move on certain weapons you can find and/or buy throughout the game. They roughly work the same as the shield special move except you need to hold down L2 right before you get hit to parry it and trigger the counterattack special move.
You can find a very good set of claws after the start of the game called Nemesis Claws that come with the counterattack special move.
I found that the easiest enemies to counterattack are the Dextral Prototype (sword in right hand) and the Lancer/Musketeers (long spear) as their attacks are easiest to see coming and less unpredictable.
For a good early farm point or practice, Gros Caillou have many Dextral Prototypes spread around the town (and usually alone so are safer to farm with) and as well as Lancers and Musketeers.
