You can see the progress of how many stars you have in the Amulets shop. I concentrated in getting Armors and Shields. The higher you HP bar is when the stage finish, the higher chance of you getting 3 stars. You can always keep farming an stage for gold to buy better armors and shields.

The key to getting the highest number of stars in a fight is your health: the higher it is at the end of the fight, the better your rating is going to be.
To make sure you maintain as much health as you can, I suggest stocking up on the healing items from the vendor. You can carry 4 of them at a time so you should be able to heal up just before the end of the fight. Leave one enemy alive, heal up as much as you can, then kill him.
