How to unlock the Scratch achievement in Stray - Definitive Guide
Go to the club (there's an entrance on the back of the building) and go to the dance floor. One of the tables on the left (when facing the DJs) there is a vinyl, grab it, take it to the DJ table and put it in the turntable and scratch.

Is the Club in the Slums? Or is it later in the game?

The Club is in Chapter 10 - Midtown. The inside cannot be accessed until almost the end of the chapter. Entering the Club is necessary to the story. The achievement can be skipped, but the Club cannot.

Thank you to the TT user who gave me the heads up with this one!
This trophy can be found in Chapter 10: Midtown. You will have to progress the main story until you have to sneak into the club that the bouncer is guarding. To do this simply go round the back and do some cat parkour and jump through a now open window! Once inside you should see these two DJs on the stage playing tunes for the entire club.
There is a table to the back of the room that has a vinyl laying on top of it, you want to pick this up and take it over to the DJ station!
Jump up onto the DJ station and you should be able to see the prompt appear on one of the vinyl. Drop the vinyl onto the deck and then the prompt to scratch should appear. After doing this you will earn yourself a lovely little bronze trophy!

There's a vinyl record on one of the tables to the right hand side of the bar. Simply pick it up, pop it on the turntable then scratch away.

This one actually seems far more complex than it actually is. When you get access to the club - as part of the story, so don’t worry if you can’t get in when you get to Midtown - all you need to do here is grab the vinyl on the table on the left (looking at the DJs) and put it on the turntables. Once you’ve done that the button will no longer be greyed out on the decks and you can scratch the vinyl. Do that and this trophy is yours.
