Dead easy if you have 2 controllers.
Load up a game on custom tournament, 2 player.
No CPU bots, press A on both controllers to select your characters, doesn't matter who you pick. Then select 'Tail Snatch' from the list on the left. This will place it in the tournament section on the right.
Move across to the right and hit, start tournament.
This will start the game. Take off and grab the tail straight away and fly around for 90 seconds without crashing. I was able to get 219 points first time. Good luck.
