Odd-jobs are unlocked as you complete missions and gain star ratings in the career. Upon getting Rank 60 you will unlock all of the 6 Odd-jobs.
It has helped me 5-star the first 5 of the odd-jobs, will attempt the 6th and final odd job when I get the appropriate rank to unlock challenge.
