the easiest way to do this if you are not good at the swimming events is go to single player mode pick a swimming event and change the diffucukty to easy

You should get this while playing all the competitions on Easy difficulty. You don't have to swim particularly fast to beat the AI, just remember it is all about your rhythm on the thumbsticks. Watch the bar at the bottom to see how quickly you should be rotating and speed up slowly to your top speed. If you don't have them after doing the competitions, go into the individual events. Unfortunately there is no way to check which events you have or do not have gold on.
