This is doable in single player, the achievement description just means that everyone who is playing needs to be on PRO difficulty. You can tell if a level was completed with everyone on PRO by looking at the progress menu and looking for a purple ribbon trailing off the stars. If that ribbon's there, it was played with everyone on PRO.
