Relatively easy once you get the hang of hitting. First of all, it is much easier to set Ego to 0 - the pitchers will usually just throw down the middle of the plate on every pitch. It is also much easier for you to create a custom team and set all their stats to 99. You will want to use X to bat which is power swing. The easiest way to hit a homerun is to position your cursor lower in the strike zone which will put an upswing on your hit. You should charge up your power swing just as the pitcher is releasing the ball. Time it right, and you'll get a homerun almost every time. You should then naturally get a 500+ foot homerun if you play a few innings. I got mine in about 5 innings (once I got the timing down). Good luck!
