You can get this by playing on 0 Ego and playing until you get a fly ball to the outfield. While the ball is in the air, hold the left stick away from the ball and your guy will move out of position but not by much. Just before the ball is about to hit the ground, press the left stick toward the ball and pull . If you time it right you'll make a diving catch. May take a few attempts but this was much easier than waiting for a legit diving opportunity to happen.
