For those non-sports players: a complete game is when a pitcher is not pulled from the game. To do this you need to pitch all 9 innings and win. I found this pretty easy on lower "ego" settings. (10-19 I had no issues at all).
Basically, just pitch, strikeout, and finish out the game with a win (without calling in a relief pitcher) 10 times and this achievement is yours.
