Andyboyishere's solution is certainly one way to get the Achievement quicker.
Another way to do it is in Season play. If you play a 48 game season, you will probably get the achievement by the end of the season. I picked a balanced team (the Bee wolves) and was able to average 9 strikeouts per game. Just make sure you mix up the location and speed of your pitches like a real pitcher does and you should get a lot of strikeouts. Throwing the same pitch to the same spot will likely result in a hit; but mixing up pitches, like throwing a four-seam fastball high and inside, then a change up low and outside and then a forkball that starts in the zone and ends at the batter's feet will get a lot of strikeouts. Make sure to vary the pattern because the computer catches on if you keep throwing the same pitch types to the same locations.

Works in both coop and single player modes towards your total.
This can be unlocked with 2 controllers with either the second controller signed into another profile or as a guest. The counter on the achievement tracker moves up with each strikeout so it can be tracked on the xbox one achievement tracker.
If a game ends normally in 9 innings you can get 27 strikeouts per game so it will take roughly 19 games of 2 controllers to unlock this achievement.
You can if you want extend the game by having neither team scoring, but I wouldn't chance it too far incase the game freezes etc.
