Easiest one:

Level 1-1: Go to the end of the course and bounce on the rock to the left of the Goal, the bananas will appear, grab them and achievement unlocked.

It’s behind the goal on the bigger of the two rocks idk what this guy is talking about lol

Took me a moment longer than I would like to admit but you have to jump behind the barrier onto the larger rock. I forgot you can even jump in this game.
