The achievement popup for me said we had to beat it in 330 seconds = 5:30. I'm not sure which description is correct, but either way there's a lot of room for error.
My main tip for controlling the canoe is that you should be holding both shoulder bumpers nearly all the time. As you're coming up to a corner, let go of the outside bumper for just a moment - your boat will change its orientation really quickly, so you want extremely brief sterring motions.
