From the main menu, select Play and then World Tour and pick any given tournament (they don't have to be played in order). If you're going for the platinum trophy you'll need to win all the available tournaments but if you want to get this out of the way quickly pick the Fiesta Tournament as that consists of only winning 2 games. The trophy will pop after you win your first full tournament and can be done on any difficulty setting.
