Can confirm that you can just sit at a campfire and choose reminisce. From there, just go down the list and either watch each one or skip the chosen skit. I skipped every skit available and every cutscene in the game and I was able to unlock this upon completing the game and
in order to unlock 300 different skits in the game. There are 320 skits according to the records found in the menu so some can be missed and still unlock the achievement.

So to clarify, you never hit RB to start a skit while you were playing through the game? You let that prompt expire and they showed up at the campfire? Comments on PowerPyx and Reddit seem to claim if you miss starting them in-game, they do not show up at the fire, and thus you could miss more than 20 and the achievement is missable. Would love to know if that's not accurate.

Here's a few notes to help you reach 300/320:
1. Obviously press RB/R1 whenever you have a notification in the bottom left
2. Rest whenever you can! Use campfires frequently! Some conversations will appear again in in the bottom right when you're resting.
3. UNCONFIRMED - As others have outlined, you may be able to find some missed conversations under "reminisce". Check there to see if you have any outstanding conversations.
4. Completing side quests and earning titles are two great ways to find skits. If you're struggling to find more skits, try unlocking more titles.
5. Increasing your bond with each character also results in skits. Reaching maximum level with each character will net you a bunch.
6. UNCONFIRMED - After I beat the game I was travelling back to old areas to complete other achievements. Skits would randomly appear and I am not sure if those skits are ones I truly missed, or are only available in the post game.
