Khroma is the easy to knock down, her guard breaks fast and you have a good window to knock her down on. The easiest attack you want to watch out for is the attack where she roars and rocks fall down. You can knock her down while she does this using heavy hitting Artes, just like you have done with many other "knock down" missions.
It's possible to also do this right after she lands from flying up and down again, but it's a bit harder to do and I've only gotten it to trigger a few times in all my time playing Tales of Vesperia.
