Did it on the first world and doesn't have to be very last bullet in ammo inventory but the very last bullet before you reload :) Happy Hunting

Can also be done with the last grenade. Just got it by killing The Shocker by using my last grenade on him.

Another option is to use the Sawn Off shotgun with the single round clip to kill a boss, since it empties its clip and reloads every shot.
I used the Sawn Off (which is an unlockable gun in the Gun Shop, second row, right side, Page 1) to kill the first boss, Gordon Bennette, on World 1-4.
The Sawn Off kind of sucks, as it doesn't do much damage and takes forever to reload. I used another gun to reduce him to only a few hits left, then switched to the Sawn Off to finish the kill, where the achievement popped almost immediately.
