The Minotaur is stunned when you close his trapdoor (by holding 
on it) while his awareness meter has only 1 bar.
Chapter 1 level 3 (Know your Enemy) is the best place to get the 9 stun, heal, and eye cumulative achievements. Simply go past the spike ball traps into a bigger room. There will be a a heal fruit on your right, an eye on the upper wall, and taking the left path will take you to the minotaur and his trapdoor.
If the Minotaur is already coming down the hallway, bait him till you can circle around him and get up where he is coming from. If you were fast enough to get up there before he came out, lure him behind the center wall before you start closing the trapdoor. It's okay if he lands a jab or 2 on you. After the stun wears off, let him kill you, press continue and rinse and repeat.
One thing to note about all the cumulative achievements is that progress seems to be lost if you dashboard or if the game crashes. At least for me, had to be done in one sitting. You'll get game over once or twice before getting these, but this won't affect the counters, only quitting the game did that for me.
