Although you can heal up to full health without eating heal fruits after collecting the health regeneration ability, that doesn't seem to count for this. The description should read "consume 20 fruits"
Chapter 1 level 3 (Know your Enemy) is the best place to get the 9 stun, heal, and eye cumulative achievements. Simply go past the spike ball traps into a bigger room. There will be a a heal fruit on your right, an eye on the upper wall, and taking the left path will take you to the minotaur and his trapdoor.
If just going for the healing achievements: collect the life fruit, walk into the spike ball traps, rinse and repeat.
One thing to note about all the cumulative achievements is that progress seems to be lost if you dashboard or if the game crashes. At least for me, had to be done in one sitting. You'll get game over once or twice before getting these, but this won't affect the counters, only quitting the game did that for me.
