This can be done very easily by using a "start the race with a Jade Ghost Wisp" bonus box and selecting the very first level which is Planet Wisp -> Wisp Circuit in an exhibition race under local play.
At the start just use the Ghost Wisp and drive along the side of the track.

To make things easier/quicker:
• Head to "Local Play" then select "Exhibition Race"
• Choose "Standard Race" at Planet Wisp's 'Wisp Circuit'
• If you have the Jade Ghost mod, equip it before your racer.
• At the start of the race, straight away head to the grass on the right, equipping the ghost just micro seconds before getting on.
• Continue at full speed on the grass,cpast the tyres, and still on the grass with the mud.
The trophy unlocked for me before i reached the end of that grass bit.
NOTE: if you fail, immeriately restart the race, and you will still have your Jade Ghost mod box to try again.

You can collect this Wisp from Item Boxes during a race, or by selecting the 'Jade Ghost' Bonus Box (these can be won from the Mod Pods machine) before a race to enter a race with a Jade Ghost.
