You need a Power character to get spikes from item boxes. You can get them as other characters but only on the rare occasion that your teammates pass them over, so it's much easier to use someone like Knuckles and get them yourself.
Set up a local race, better to make it Individual rather than Team so you have more targets. Ocean View is an easy track, but you can use any you prefer. Then just hang around at the back until you get the spikes from an item box, you can keep picking them up or just restart if you don't get it straight away.
Once you've got the spikes, simply maneuver yourself into the middle of a group of opponents and hit as many as you can with it.

You can collect the Pink Spikes Wisp from an Item Box and when it is activated with 
it will spawn pink Spikes around your vehicle that will jab out to attack and spin-out nearby opponents. Play as a Power type character to be able to get Pink Spikes from the Item Boxes in addition to receiving them through Item Transfer.
This trophy requires the player to spin-out 3 racers with 1 Pink Spikes Wisp. The best time to activate the Pink Spikes for this is when you’re amongst several rival team racers, this is much easier on narrower levels such as the Casino Park tracks. You want to try and hit 3 racers within seconds of each other, although they do not need to spin-out simultaneously.
