Thank you. I tried not taking fall damage as I thought that that may have been a reason for not unlocking. I will try again for just the main objectives and update here.

EDIT: Managed to get this done using a similar method to the video posted by yourself. It would appear that the exact requirement for this achievement is not to be detected by the helicopter whatsoever. I tried my method and the helicopter beamed his light on me and I didn’t unlock the achievement. When I tried the second time, I avoided the light and the achievement unlocked. Fall damage is fine and I made sure all mods were turned off.

Mods can be active and you can be seen by the chopper. Just unlocked it with mods.
The description is wrong. It should be Complete An assortment of dishes without recieving any damage from any source

This includes fall damage, fire damage, explosion damage and the chopper (obviously).

Update - I gave it another go without the mods active and it popped after just getting the required mission objectives and completing the mission, no optional objectives. I could also take fall damage, just not get shot by the helicopter. Best advice I can give is make use of the tunnels under the mansion :)

Here is a simple guide of what I did:

MAKE SURE YOU HAVE CREATIVE ENABLED

Setup: At each dish, block any windows and line of sight from helicopter before hacking any. You want to do the dishes that are attached to the homes. Make tiny holes behind the dishes from inside the houses for easy access to hack.

Steps:
1. Hack dish on satellite tower FIRST
2. Go under map with creative, exit creative and sit in water
3. Look at map to see where the next dish is (go to ones attached to the homes and the required ones)
4. Fly under map in the direction of next dish
5. Go to the area of the next dish (Always block windows and go inside the houses
6. Once done with needed amount of dishes, fly under map, look where escape boat is, fly under map to be under the boat, and get out of creative under the boat and escape.
