Once you beat the story mode, you should have unlocked the invincibility and the power punch in cheat menu.
Just hold the left stick to the right and hold X, one stage should cost 40 seconds, you can do 35 seconds if you are fast.

I have beat the story mode, but all the options are still locked when I go to endless mode options when I start the mode. It shows I've completed many challenges but they still have the lock on them. Any ideas

Hey, @SergeantWesley. Please see the note in my achievement guide below. I've also emailed the dev about this bug. Hopefully he'll patch it soon.

Once you've completed the story mode, you'll unlock the UFO mode cheat. This will make this achievement go very fast.
Startup endless mode, then go to cheats. Go down the list and select UFO mode. This turns your character into the UFO.
Now hit
twice to select the rocket launcher. Move right while holding down 
and you'll wipe out the city and reach the exit in about 20-30 seconds.
Repeat until the achievement unlocks. You do not need to do this in one playthrough; completed levels are cumulative.
Note: Apparently there is a bug the Endless Mode Options won't work in Xbox unless you unlock an achievement in the *current* session. So yesterday I got them to work because I completed the Obliteration Nation (50 trucks) achievement. After I completed that, *all* of the unlockables started working again. So, to use my guide, you'll first need to complete any other achievement, and whatever you do do not logout! I've emailed the dev about this, but it would be helpful if more people reached out, too.
