Giant Rackham is first found in Tintin and Haddock mode level 7 "The Return of the Pirate". You must complete all the previous levels in the first side-room to unlock the door in the middle.
Simply complete the level to encounter Rackham in a boss fight at the end. Avoid all his sword attacks until his face looms over the platform, then throw a bottle into his large nose. Do this three times to beat Rackham, and unlock the achievement.

Giant Rackham is the boss in TinTin and Haddock mode and you will first encounter him at the end of level 7. The fight will consist of him swinging his sword and trying to hit you from above or by swiping from the side. His attacks are easy to see coming and all you need to do is either move out of the way or jump. Every so often he will lean in and 2 explosive bottles will appear. Quickly pick one up and aim for his face. Hit him 3 times and the achievement will unlock.
