Challenge mode is available from the beginning of the game so you don't have to unlock anything first. There are 3 modes in challenges: SIDECAR, PLANE & SWORD, all with variety of challenges and differing degrees of difficulty from Easy to Expert.
The SIDECAR challenge consists of 3 modes: RACE, CHASE & FIGHT, total of 12 challenges and you'll need to get a Gold ranking in all of them.
RACE: Hold up on the controller after going over a jump for the speed boost and stay off the gravel, you'll start to learn where to turn and what route is the shortest.

CHASE: This involves chasing a truck and you are controlling it while AI Haddock tries to blow it up. This is similar to race but I found its easier to follow the truck directly, anticipate where it will turn then cut corners to catch up. The closer you are to the truck the more damage you'll do and faster it can be destroyed. Don't go out of your way for jumps.

FIGHT: I found this to be the easiest of the 3 sidecar challenges. Don't spam the fire button unless you are aiming at the truck or chopper, make sure the reticule is green then fire individually. You'll need a few turns to figure out when to shoot the bikes or the chopper(s).

This achievement isn't that difficult as you only need to go for Gold, not Platinum times. But with a little practice Pt is not that much harder than Gold. If you are going for 100% completion you should keep going for Pt. medals to work towards this achievement:

This Achievement is really not that difficult all you need to do is get used to where the jumps are on the courses for the time trials & when you are in control riding the motorcycle just try to stay on the track as best you can so that Haddock can shoot the truck as the closer you can get to the truck the faster it is deystroyed last of all is Tin Tin's turn to shoot the enemies from the sidecar well all I can really say is that practice makes perfect as there's no other way to tell you how to do this one.
