After running the tutorial for Alto's Adventure you will start the game, there are no goals that are tracked in the tutorial and the tutorial is mandatory as far as I can tell.
At the start of the game you will be given a list of three goals to complete for each level. These goals are easy in the beginning and get harder as you progress levels. It is best to complete all three goals then crash, you will know you have completed the goals when the goal pops up on the side with a star by it and disappears. Keep track of each pop up and when you hit three crash and restart. If for some reason you do crash before reaching all three goals on a run the goals you have completed (or the progress you have made towards a goal (for example if you had to travel 5,000 meters) will still be completed/tracked, once you start the next run whichever goals you did not complete for the level will need to be completed before you receive the next set of goals.
Completing 10 goals requires a minimum of 4 runs. 25 a minimum of 9 runs, 75 a minimum of 25 runs, and to get all the goals 180 goals a minimum of 60 runs. Most likely you will end up doing a lot more than 60 runs due to the nature of the game.
