A Shutout does Not have to be a perfect game, or a No Hitter.
You merely have to prevent the opposing team from scoring a run. If you win, and they have 5 hits, but their score is 0, then it's a shutout; and you'll get this achievement. It's pretty simple.

It's worth noting this did not unlock in a 3 innings match, I had to play 5 innings for it to pop

Throw a shutout with your starting pitcher. Obviously easiest if put on Easy difficulty and done with a strong pitcher.
