The 7 sins are encounters against mini-bosses in special rooms. You can recognize you're facing a Sin when you enter a room and it says "Isaac VS"... a sin.
Yup that may sound obvious but as a non-native english speaker I didn't realize I was "fighting the biblical sins" until I unlocked this achievement :D
Not to be confused with the bosses at the end of every level.
For this achievement to unlock you have to kill:
-Greed
-Envy
-Pride
-Gluttony
-Sloth
-Wrath
-Lust
There is no trick to find specifically the ones you need but you'll most probably come across each of them by playing normally.
PS: Killing the 7 sins will unlock The Book of Sin as lootable item in your future runs. When activated it randomly drops one of these pickups:
-Full Hearts
-Bombs or bomb variant
-Pills
-Coins
-Tarot Cards
-Soul Hearts
-Keys or Golden Keys

Over multiple. I am not sure you can come across all of them in one playthrough
