How to unlock the Where's down? achievement in The Crew Motorfest - Definitive Guide
I did this from the rooftop of Waikiki Wing Hotel. It's a medium-sized building in south Honolulu overlooking the beach, just southeast of the Donut "Hi-Low" event. The roof is shaped like a letter "V" resembling wings. I was flying around looking for a rooftop that was high enough with the most surface area and this was the best I found in the main city.
What I recommend doing is setting a Motocross bike as your ground favorite vehicle so you can directly spawn into it once you are at optimal distance with your plane.
Once in the bike, simply floor it from one edge of the roof to the opposite side while trying to go as straight as possible. I used a bone stock Motocross bike and managed to hit 5th gear with nitrous for sufficient launch. Having upgrades on your bike would probably make it even easier. Remember to use extreme mode (X button by default) for the backflips and then quickly spawn into the plane before losing too much altitude.
It's important to really nail the backflip maneuvers before getting the plane to spawn because after you change vehicles the rewind function only applies to the current vehicle at the time you got into it. Keep practicing with rewind until you feel confident enough to continue.
I should mention that the roof has a wall of sorts surrounding it with no actual clean ledge for the jump, however if you angle your bike properly it will launch as if it's a proper ramp. Managed to launch a hypercar off it too.

I can't figure out what I'm doing wrong on the backflips. My guy stays on the bike and the backflips are slow (even when holding X).

You have to press Y to set it as your favourite vehicle when in the vehicle selection screen. This wasn’t indicated in the guide, so I’ve voted this down.
Also, you need to hold the X button whilst doing the backflips. This wasn’t indicated in the guide either.

Tried the building solution and just couldn’t get it to work for me, and I was rubbish at trying to land on the roof.
There is a Rider Feat Escape at Haleiwa, directly due south of the football pitch which is just SW from the centre. The feat is called Hale’Au’Au’ Gulch. Head north from the feat and there is a large ramp. Did this on my second attempt here.
Even if you fail, if you have fast travel enabled, you can fast travel straight back to the Escape feat and try again.
