This is fairly simple and will be unlocked throughout beating the game.
Mostly the best way to separate limbs is to either hit b or x when the enemy has blue sparks flying out of them.
If b is hit you will grab and maybe slice a limb off but the best way to do this is using x by slicing them in half or into more pieces. Happy hunting!
