How to unlock the Auriel's Bow achievement in The Elder Scrolls V: Skyrim Special Edition - Definitive Guide
Before you can obtain this achievement, you must first acquire Auriel’s Bow by completing the quest “Touching the Sky”. The quest is given by Serana while she is your follower and is the second to last quest in the Dawnguard storyline. She will travel with you to the Forgotten Vale and the bow will be given to you by Gelebor after locating him in Darkfall Cave. You must then kill Gelebor’s brother, Arch-Curate Vyrthur, before he will turn over the bow.
Upon killing Arch-Curate Vyrthur, Gelebor will reward you with Auriel’s Bow along with 12 Sunhallowed Elven Arrows and 12 Normal Elven Arrows. Gelebor will then inform you that he will craft more Sunhallowed Elven Arrows if you give him Normal Elven Arrows. The Normal Elven Arrows can also be given to Serana and she will anoint them with her blood transforming them into Bloodcursed Elven Arrows.
How Auriel’s Bow Affects the Sun:
Firing a Bloodcursed Elven Arrow into the sun will cause it to eclipse and cast an ugly red corona until it sets that evening. This effect will be gone the following morning.
Firing a Sunhallowed Elven Arrow into the sun will cause it to flare up and it will cast rays of light that will damage nearby enemies. This effect has a fairly short duration.
To obtain the achievement, the player must fire either a Sunhallowed Elven Arrow or a Bloodcursed Elven Arrow into the sun. Obviously, this requires the sun to be in the sky, so you cannot do this at night. You can, however, still fire the arrow into the sun through cloud cover.
To fire the bow, equip it (and be sure to equip the Sunhallowed or Bloodcursed Elven Arrows as well), aim at the sun and then hold down and release. The achievement will unlock as soon as the arrow affects the sun.
If nothing happens when you fire the bow, try unequipping everything (armor and weapons). Then re-equip the bow and arrow and try again. That worked for me for some reason. **Cheers to Elder Martin for the tip**
Good luck and enjoy Skyrim on the One!

The console says : Spell 'Auriel's Bow' not added to Achievments (that's my character's name) when I try to use the command... :(
EDIT : I reloaded a save and re-entered the commands, spell was added, equipped the bow and Bloodcursed Elven Arrows and shot the sun, worked :) Thank you !

MINOR SPOILERS:
After getting the bow from the quest "Touching the Sky" you will actually get 12 Sunhallowed Elven arrows and 12 normal elven arrows.
The trick is to equip the Sunhallowed arrows and your Auriel's bow and shoot at the sun. I myself left the caves and as soon as I got out I equipped them both and shot at the sun. You'll get an achievement and quite few fireworks after doing it, and it will take about 3 seconds for the special ability trigger, after which you'll almost instantly get your achievement.
The way KillerBEA described it works the same way, but I was too hasty to wait for tainted arrows.
It seems as if you won't be able to get tainted arrows unless you side with the vampires, but for more sunhallowed arrows you'll have to go back to the elf that's in the place where you killed the Arch-Curate. He'll craft them from your elven arrows for no cost.

For this achievement, you'll need to have the proper bow and arrows, as well as the spell cast on yourself. Do so with the commands below.
- Player.AddItem 02000800 1
- Player.AddItem 020098a0 999
- player.addspell 02007ebc
Now, if it is not sunny out, use "set gamehour to 1500" and then you'll need to equip the bow and arrows, take aim at the sun and shoot it. There should be a dramatic change to the sky and the achievement will unlock.

After you receive Auriel's Bow, ask Serana to sprinkle her blood on the arrows. Then we look for the sun in the sky and shoot at it.

The arrows must be elven. They must either be sprinkled with the blood of Serana, as written above, or ask the paladin Gelebor to bless them. Bloody arrows cause darkness, which is good for vampires, while solar arrows, on the contrary, cause streams of light that hits vampires, which is useful if you choose the path of the guards of the dawn.
