How to unlock the Bloody Bar Brawl achievement in The Evil Within - Definitive Guide
This can be easily gotten in Chapter 2 Remmnants. A short while into the Chapter you'll come across a cutscene where 2 normal guys morph into monsters. Once the cutscene ends switch off your lamp if you have it on and hold down then hide behind the hay and wait for the enemy to come out into the road, after a while he'll walk away so begin following him once you get close enough he'll turn so hold down and then hit to throw the bottle at him (apparently it must strike he's head) he will then stumble so hold down and go around him till you see the option to hit and press it.
If you fail you can reload the checkpoint (autosave)
Here's a video explaining how to get the Achievement.

To get it you must throw a cystal bottle to an enemies head, then bend down and stab him with a dagger in stealth mode. You can see how to do it in the video.
This achievement can be obtained anywhere you can find glass bottles. Here is the first location in Chapter Two. You will find yourself behind a hay stack”. Pick up the glass bottle and get close to the enemy in front of you. When you are a few yards away, aim and throw the bottle at him. Now hastily get behind him by sneaking and kill him as soon as the sneak kill prompt appears.
Simply grab a bottle and throw it and hit a nearby haunted. If it connects it will stun him and you can sneak kill him. This is best done on Survival or Casual as the recovery time gets quicker on the higher difficulty levels. Nightmare and Akumu do not leave you with much time to sneak kill. You basically need to be within sneak kill distance when you throw the bottle on those levels.
This can probably be done anywhere, but I got it in Chapter 3, near the end. I systematically took out all the enemies in the area and in the buildings, saving frequently (using the mirror portal in the back room on the lower level of the main house). I hadn't released Chainsaw Guy yet, but there was one final enemy near the far gate that you have to go through to finish the level. I just snuck through the house on the left side near that area, to the open window, hiding. When the last enemy turned and started walking away from the window, I climbed through, threw a bottle (there was one by a wall in that same building, near the first of the two wall switches), got close, crouched (with R2) and stabbed (with X) to get the trophy. I had to try a few times because the enemy doesn't stay stunned very long, and I tended to miss my throw, but with the save point being not far away and having taken out all the other enemies, I could pretty much hurry back to where I needed to be after re-loading, for a second attempt.
This trophy can be slightly misleading. You don't have to hit an enemy with a bottle when he is unaware of you to get a stealth kill. In fact, it may be easier to hit an enemy with a bottle when he is coming towards you.
Crouch throw a bottle at the head of one of the regular zombie enemies to stun him momentarily. Note that it must hit him in the head to stun him. Run towards him quickly, crouch, and hit X to perform a stealth kill while the zombie is still stunned from the bottle. Throwing bottles when crouched keeps you out of the long animation that Sebastian does when you throw while standing upright, and crouch throwing is more accurate. Note that the stealth kill can be performed from the front or back of the enemy.

Approach the enemy, it doesn’t matter whether he noticed you or not, press the strike button ( RT by default) and immediately the stealth kill button ( RB+ A by default). Nothing complicated.

Done in Chapter 2 (convenient place). Alternative video with achievement:

You pick up a bottle, throw it right at the zombie’s head to stun it, and finish it off with a knife.
