Easiest way I found to beat her is burn all the surrounding dead bodies right away before encountering her in the middle platform. Use the barrels and torches(crouch and melee with torch) if you have no matches to burn the bodies. Pull the levers on both firepits to drop the dead bodies in there as well.

This is for beating Laura in Chapter 5. You can easily beat her using your surroundings. You want to use fire against her. There are two explosive barrels and 2 torches you can use as well as some switches that will shoot fire out of areas on the map. If you have a fully upgraded Harpoon bolt(Which is unlikely in your 1st playthrough) that will also light her on fire. Keep lighting her on fire until she dies.

In Chapter 5: Inner Recesses, You will reach an incinerator room where the door you came into will disappear. Moving to the center of this room begins the boss fight with Laura. Note that weapon damage is not effective against Laura and that if she catches you she will one hit kill you.
Lead Laura to a barrel and blow it up to make her disappear and then run into the small room on the right of where you came into with the burning grated floor and the ladder on your left.
