how do you do the ones that require you to bomb one of your own buildings?

Just find the building and bomb it like you would any other. Just cause it's your place doesn't mean you can't cause some damage. You'll lose money/bonuses from it, but it's only a temporary loss.

THIS ACHIEVEMENT IS NOT GLITCHED! (Well, it's debatable.)
Despite what anyone tells you, it's not glitched; the trick is that you can't rely on the in-game tracking. Mine were all checked off and it appeared to be glitched, but it wasn't. It's just a broken tracking system, which I suppose is debatable whether it's a glitch or not. A 100% is possible as far as I know, you just have to go to each of them again:
The suggestion I have is to use Codester's list or the corrupt officials list in the game. The less you already have done, the better. Go to each ones and talk to them. Even if they're already 'checked off' on the collectibles screen.
The way to truly know if they've been 'completed' is if they let you 'Buy Favor for $2000' when you talk to them. Mine were all checked off but I went to every official and it ended up being the police chief in New York who was not completed, despite the game telling me otherwise.
Now, if I had done that early on, and it 'uncompleted,' then I suppose it'd be a glitch. I'm not really sure why it was checked off in the first place. But don't panic, all you have to do is travel to each of the twelve people and double check that. It's a shame that the tracking doesn't work, but it could be worse, it could be a broken tracking system for Executions or 'hidden packages' instead, after all.
Luckily the game's maps are relatively small compared to Godfather 1 or other games, so it's not a big hassle.

if you look in the dons view at 'corrupt officials' you will see the people and their locations.
then if you look in collectibles you will see which ones you have and which you are missing.
relatively easy if you have a list or know what your looking for.
note: it's sometimes better to unlock all the ones in each city first then do them, saves going back and forth.

In each of the three cities, there are corrupt officials that you can do favors for. Doing these favors will return you a favor that you can use anytime you want. The favors you have to do are the same as the kill condition ones (busting up a store, beating someone up, breaking into a safe, bomb a business or murder). The favors that you get are get your men out of the hospital quicker, rebuild a bombed business quicker, call in a raid on another family, call off a police pursuit, free men from jail and in one unique case, lower a bridge. There are 12 corrupt officials in all, three in New York, six in Florida and three in Cuba.

I’ll add a little, I myself suffered for a long time with it, it was the last one left, the fact is that you can’t get the same type of service for every service, but in general you need to go through all 12 of these missions!!! 3 in New York, and Cuba, and 6 in Florida, keep in mind that there are services on how to imprison a member of an enemy family, you must receive it before you destroy the house of the leader of this family!

In Don mode, in the “items” section (it seems), along with the secret weapons found, there is a sub-item with services for corrupt politicians.

The trophy is not missable, it was completed when only one family out of 5 remained, we do 12 missions (one for each of the 12 politicians) and get a trophy, it is not necessary to use bonus services for a completed mission for the trophy.

Don't look for the sixth one in Florida, it will appear later in the story and you won't miss it.
