Story related, she's very easy to beat. Just move around and follow her when she's retreating. Slash and bodyslam as much as possible. Also disturb the flies and she'll get distracted by them.

also, note its best to just run past all the other witches that you encounter, the ones by all the caves. if you try to defeat them you just lose your health and waste time you don't need to
