Any animal defeated, big or small, will count towards this. Once you can change to cat form (unlocked early in the story), the easy way to get this is to target the smaller animals you will see on the roads (hedgehogs, quails, etc...).
In cat form (press
when in human form), hold 
and you will see any animals within range highlighted. A yellow crosshair will mark them and if you are pointing towards them this will change to red with a circle. When the marker is red, press 
to run at them and strike. Occasionally you'll miss as the animal moves away, but most times its an easy kill.
I farmed this for the Small Animal Hides used in the PC money exploit by going into town and turning left past the Town Hall. Go all the way to the Eccles Road Shrine - from your home you'll pass 7 small animals on the roads and there are another 5 on the hill near the shrine. Use the shrine to warp back home or go about missions etc... The animals will respawn after a couple of days so repeat.
All the roads in the game are littered with smaller animals so just find a logical path that works for you or defeat animals as you complete missions and tasks and this will unlock eventually. You can see your progress on the achievement tracker.
