The best mission to do this on is "Friends Who Can Help 3".
Basically all you do is run from site to site destroying the base building. Once you have been to all three sites, a transmitter will appear. You than have to run to Central Park and throw it into the lake...
It took me two tries to do this with out defeating anyone.
I would suggest not running when you are close to the bases so you don't kill any soldiers. Also, watch as you are hitting the building because the game will auto-target near by enemies.
Should only take you about 3-5 mins!

@rdfreeman33: it's possible to replay missions via the map screen. Use the D-Pad to cycle 'chapters' and then highlight the required mission on the map.

It is possible to do this during the mission where you attempt to steal the army's new cannon, after the enclave steal it first and you have to chase them down. This is where I got the achievement.
Just follow the guy that is carrying it, jump and light punch (x) him, which shouldn't kill him, retrieve the cannon and carry it to the drop site to complete the mission.
Make sure you don't kill anyone throughout the mission (which you really don't have to in order to complete it) and you will get the achievement.

You can do this on any mission where the requirements do not include defeating enemies or defend xxxx. I did this on the mission where you have to find the transmitter in the army bases. Just knock down the bunkers, pick up the transmitter, and chuck it into Central Park Lake without killing the army members.
