Here is a map of that includes all the subways, Gamma Canisters and Rage Canisters:

Just follow the map and set waypoints to the locations and it is pretty simple from there.

There are 19 in total. They are identified by a yellow circle with an "S". You must touch it (almost go down the steps) or activate it to "find" it.

Check this post for the locations.

While running around the city, keep an eye on the minimap. If you see a circle with the letter S, go to it. If you haven't found this station, it will appear on the map and you can quickly move around it. There are about 15 or 19 to find. I don't remember how many there are. You'll get them as you go along.
